BEEF AND BEAN TASTY ENCHILADAS

I felt in the mood for a nice hot and cheesy lunch and the perfect thing to make was cheesy enchiladas. I also had a nice cool margarita to go with it lol

Servings: 8-9 Enchiladas

INGREDIENTS

  • 1lb ground beef, browned off

  • 1⁄2chopped onion

  • 1(1 1/4 ounce) package taco seasoning mix

  • 1(16 ounce) can refried beans

  • 1(4 ounce) canchopped green chilies

  • 1⁄2cup beef broth

  • 1(14 ounce) can mild enchilada sauce

  • 8 -9flour tortillas

  • 3 -4cups shredded cheese

DIRECTIONS

DIRECTIONS

  1. Brown the ground beef and onion.

  2. Stir in taco seasoning mix, refried beans, green chilies, beef broth, and 1/2 cup enchilada sauce.

  3. Cook on medium heat until thick.

  4. Stir occasionally for 10-15 minutes. Remove from heat.

  5. Fill each tortilla with about 1/3 cup of the mixture and a small handful of cheese.

  6. Roll tight and place them seam side down, side by side in a 13x9-inch baking pan.

  7. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.

  8. Bake on 350°F for 15-20 minutes.
