Well, I actually slept in this morning...no matter what I usually wake up at 7 am on the weekends and 4:45 am Monday-Friday. So being an early riser is the norm for me but not today!! I did not wake up until 11 am so therefore Brunch it shall be.

I made sliced chicken sausages with wedge potatoes with onions and seasonings with a couple of eggs over HARD!! Yes, hard...I do not like anything that is easy...BA DA BOOM...no I am not a fan of ingesting anything even the tiniest bit RAW!! Remember if you eat an organism that is not fully cooked with heat then whatever that organism has ingested will now live in YOU!! Life is just too short to have tapeworms lol. Now on that tasty note go and make yourself some brunch!!

LORI ANNE'S GOOD GOOD BRUNCH!!

Ingredients

1 organic chicken sausage

1/2 sliced onion

1 Russet potato

Olive Oil cooking spray

2 eggs

Directions

1. Using a ample sized skillet add a healthy spray of your cooking spray and place on medium heat

2. Add your chicken sausage and allow it to brown on all sides

3. Slice your potato into medium thick wedges and place in the pan and let them get a nice golden brown.

4. Add you sliced onions to the pan

5. Cut up the chicken sausage into even slices

6. Add whatever seasonings you like-I used sea salt, pepper, a dash of cayenne pepper, onion powder and a splash of soul seasoning and cook until all is golden brown and delicious.

7. In a separate pan prepare the two eggs any style you like-I like over hard

8. Serve and Enjoy!!
