My Diva's Salad...this is one great tasting salad!!

Leafy greens are some of the best superfoods you can put in your body! I love making all kinds of combinations of salads...you can clearly see that if you scroll through my site! Tonight's dinnner is a hearty yet refreshingly delicious protein and vegetable configuration. I call it my Diva's Salad because if you eat enough of this you will not only look like a Diva but you will feel like one too!
Lori Anne's Diva Salad
Ingredients
2 cups of chopped organic romaine lettuce
1 cup of chopped organic baby spinach
1 diced organic golden delicious apple or a granny smith if you love a little tartness
1/4 cup of whole organic pecans
1 tablespoon golden raisins
1 tablespoon regular raisins
1/4 cup of caramelized onion slices
1/2 cup of chopped organic chicken (white meat/dark meat) whatever you prefer
3 slices of a nice firm avocado (use the rest to make a nice guacamole)
Sea salt, pepper to taste
Salad Dressing of your choice (I chose a red wine vinaigrette)
Directions
1. Chop and wash the lettuce and the spinach leaves and dry them in a salad spinner
2. Slice a firm yet ripe avocado setting aside 3 slices for your garnish
3. Toss your salad and place it into a plate or salad bowl
4. Chop your chicken and add to the salad
5. Add the diced apple, pecans, raisins and onions
6. Sprinke salt or pepper as desired...remember a little bit goes a long way.
7. Place your avocado slices in your bowl
8. Drizzle your preference of salad dressing over everything
9. ENJOY!!!
It is healthy and chocked full of a wonderful combo of proteins and carbs!!
