Pecan Coffee Cake

It is hectic in my household tonight! I came home from work and had to prep my Madagascar Vanilla Apple Pie filling and bake a Pecan Coffee Cake. I am exhausted and tomorrow I must make 1 more Pecan Coffee Cake, two of the Madagascar Vanilla Apple Pies plus a Lemon Pound Cake with lemon drizzle for my daughter and my daughter will be makeing two sweet potato pies andall of this is happening on top of getting the main course food prepped for the rest of our Thanksgiving Dinner!

I LOVE COOKING AND BAKING but I also have to go to work in about 2 and a half hours ARGGGH!! My Thanksgiving menu consists of croissants and pastries with coffee, tea or juice for breakfast. Dinner will consist of two oven roasted chickens both stuffed with my homemade cranberry stuffing and they will be surrounded by oven roasted potatoes and carrots. There will be a HUGE pan of macaroni and cheese, candied yams, corn pudding, rolls, collard greens seasoned with turkey necks, garden salad with three types of dressing, and a large pan of dressing. My little family only consists of 5 people to cook for. I will be going to another family members house to enjoy their cooking as well...then....SHOPPINGl!!! I will be off from work from Thursday until Monday so can you say SHOP TILL YOU DROP!! Happy Thanksgiving everyone!
