Fried Apples and Ice Cream

I wanted to have something sweet yet somewhat healthy tonight as I enjoy my Doctor Who episode! So I decided to make some fried apples and top them with some French Vanilla Ice Cream.

Servings: 2

Ingredients:

4 medium apples (I used golden delicious)

3 tablespoons of coconut oil (I used Nutiva Refined)

Ground Nutmeg-to taste

Ground Cinnamin-to taste

2 teaspoons Granulated Sugar

Directions:

1. Core and quarter all the apples and cut each quarter into uniform thin slices.

2. In a medium sized frying pan add the coconut oil and heat on a medium setting.

3. Add the apple slices and ensure that they are laying flat for maxium caramelzation.

4. Fry the apples until they are golden and soft approximately 10 minutes.

5. While the apples are frying sprinkle with the nutmeg and cinnamin.

6. Sprinke the sugar over the contents and allow to heat just a bit more.

7. Place the heated apple mixture into a dessert bowl and add two scoops of your choice of ice cream.

8. Dollop whipped cream on top and enjoy!
