Double Dipped Crispy Fried Chicken Breasts over Pasta!

My inspiration for creating dishes comes from everywhere! I LOVE organic chicken and use it in every way imaginable! This dish uses three organic antibiotic free chicken breasts that were marinated in a combination of lemon juice, spices and apple cider vinegar. The chicken was then dredged in egg and then into a seasoned flour mixture. I dredged the breast two times so it made a nice double dipped coating. The chicken was then placed into a frying pan that had organic coconut oil melted over medium heat. I fried the chicken breasts until golden brown and internally cooked and then allowed the meat to rest before slicing it up and plating it over my pasta.
The pasta you decide what you want to make but I used Barilla Protein Pasta- Rotini and seasonings with sliced chery tomatoes. You can use pasta sauce if you like but I opted for lighter fare using a nice balsalmic vinaigrette that I tossed my pasta in. This was a delicious and protein packed healthy meal.
