Chocolate chip Cookie Stuffed Brownie Cupcakes

Prep Time: 20 minutes\

Bake Time: 30 minutes or until a tooth pick inserted comes out clean

Servings: 24

Preheat Oven: 350 Degrees

Line 24 baking cups with paper liners

INGREDIENTS

For the Brownies:

2 1/4 cups all purpose flour

6 large eggs

2 cups Dutch Process Cocoa

1 1/2 teaspoons sea salt

1 1/2 teaspoons baking powder

1 1/2 teaspoons espresso powder or extract

1 1/2 tablespoons vanilla extract

1 1/2 cups unsalted butter (2 1/2 sticks)

3 cups sugar

2 cups (12 oz package)

Nestle Toll House semi-sweet chocolate morsels

For the Cookies:

2 1/4 cups all purpose flour

1 teaspoon baking soda

1 teaspoon sea salt

1 cup unsalted butter (2 sticks)

3/4 cup brown sugar

3/4 cups granulated sugar

2 teaspoons vanilla extract

2 large eggs

2 cups (12 oz package) Nestle Toll House semi-sweet chocolate morsels

Instructions:

To make the Brownie Batter:

1. In a mixing bowl add 4 eggs and beat at medium speed add the cocoa, salt, baking powder, espresso powder (extract) and vanilla and beat for 4 minutes.

2. Melt the butter in a saucepan and then add the sugar and stir to combine.

3. Add the hot butter/sugar mixture to the bowl with the egg/cocoa mixture and stir until smooth.

4. Add the flour and chocolate morsels and continue stirring until smooth.

5. Spoon equal portions of the batter into the cupcake liners until the bottoms are halfway filled.

To make the Cookie Batter:

1. Combine the flour, baking soda and salt in a small bowl

2. In the mixing bowl add the butter cut up into small chunks and blend on medium speed until creamy.

3. Add the sugars (brown and granulated) and vanilla extract and blend until light and fluffy.

4. Add the eggs one at a time and blend until completely combined

5. Add the flour to the mixture and blend until well incorporated then remove from mixer.

6. Add the chocolate morsels and hand mix until well incorporated

7. Spoon equal portions of the cookie dough on top of the brownie mixture and spread to a uniform layer

8. Spoon the rest of the brownie mixture on top of the cookie dough until 3/4th of the liner is filled

9. Bake at 350 degrees for 30 minutes or until a toothpick inserted comes out clean

10. Remove from oven and allow to fully cool then serve or serve while still warm with a scoop of vanilla ice cream.
