Multi-Grain Banana Pancakes with Italian Sausage Medallions!!

My daddy is here visiting with me for the next couple of weeks so I decided to make one of his favorite breakfasts ....banana pancakes!!

Ingredients:

Pancakes

2 cups Red Mills Multi-Grain Pancake mix

1/2 teaspoon of ground cinnamon

3/4 cup milk (I used heavy whipping cream and a bit of water)

1/4 teaspoon of pure vanilla extract

1 tablespoon of canola or vegetable oil (I used just a drizzle of EVOO)

2 ripe bananas sliced with 1 sliced bananas reserved for garnish.

Enough vegetable oil or non stick spray to coat the bottom of the pan and the pancake molds

1 non stick griddle or flat pan

2 pancake molds (optional)

Pastry Brush to brush on the oil into the pan and onto the pancake molds.

Italian Sausage Medallions: Just use 3 sausage links and cut them into medallions and add a little water and EVOO into your pan and cook them until done and golden. Serve along side the pancakes.

Instructions:

Heat the pan on a medium

Brush the vegetable oil onto the pan and the pancake molds and set the molds into the heating pan

Mix all the ingredients except the bananas into a bowl

Once mixed drop in the sliced bananas

Now pour the batter into the pancake molds and cook until golden brown (rememember to remove the molds and flip your pancakes to ensure even cooking.

Place each pancake onto your serving plate add a pat of butter and drizzle maple syrup (heated or not) onto the pancakes and garnish each with the reserved banana slices and serve

(optional: You can add some sliced strawberries as garnish as well)
