EGGS IN A BASKET

This morning I wanted something different for breakfast so I created this dish. I hand cut up some potatoes into french fry sized portions. Then I added them to a frying pan that was coated in EVOO. I cooked the potatoes and threw in a smattering of spices and seasoning, garlic, onion, sea salt, pepper, paprika etc...throw in what you find most flavorful and then a couple of pieces of cut up turkey bacon. Then when the seasoned potatoes and turkey bacon were just about done nice and caramelized I cracked two eggs right on top and let them cook as well. I cooked mine over easy hard...then tossed some shredded cheese over the entire creation and viola...breakfast! Try this recipe it's fun fast and easy and very tasty!
