Lemon Cupcakes with Buttercream Frosting
Yield: 24 cupcakes
Cook Time: 17-21 minutes
INGREDIENTS:
For the cupcakes:
1 stick Butter, slightly softened
3/4 cup Sugar
2 Eggs
1 1/2 c. Flour
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
1 Lemon, juiced and zested
1 tsp Vanilla
2 tsp Lemon extract
1/2 tsp Yellow food coloring (if desired)
For the frosting:
1 stick Butter
4-5 cups confectioner's sugar
3-4 tbsp Milk
1 tsp Vanilla
DIRECTIONS:
1. Preheat oven to 350 degrees.
2. In a stand mixer, or large bowl, beat butter, sugar, and eggs together until very fluffy and creamy.
3. In a separate bowl combine the flour, baking powder, and salt. Mix together until combined.
4. In a small bowl, stir together the milk, freshly-squeezed lemon juice, vanilla, and lemon extract.
5. Allow to sit and curdle for about 1 minute then add milk to the batter and beat just until combined. Spoon into muffin tins lined with cupcake wrappers.
Bake for 17-21 minutes or until the a toothpick poked in the center of the cupcakes comes out dry and clean.
Frosting
1. In a stand mixer beat the butter until smooth and creamy then add the vanilla.
2. in alternating turns add a cup at a time of the confectioner's sugar and a tablespoon full of the milk until all ingredients are incorporated.
3. Beat until the entire mixture is light and fluffy.
4. Cooked cupcakes completely before piping frosting on top of cupcakes.
5. Place Buttercream into a piping bag with your choice of decorating tip and pipe onto fully cooled cupcakes and enjoy!
