Tuesday Smoosday What's for dinner?

Well, it's Tuesday...in all it's glory...not!! I decided to make the two organic chicken breasts that I had taken out of the freezer on Sunday night and left in the fridge. I LOVE sweet potatoes aka Yams and chicken. Since we partied it up at work today with those homemade chocolate chip and oatmeal raisin cookies...I decided to wholesome it up for dinner tonight to counteract the damage lol.
I made baked chicken breasts that were marinated and seasoned and cut up two sweet potatoes into wedges and had a side salad dressed with a red wine vinaigrette to go along with my a sangria I made with fruit and red wine.
Just wash and marinate your chicken in your favorite marinade and season both breast well. Line a pan with some foil ...(I always do this because it makes clean up a cinch) and then drizzle some EEOO (extra virgin olive oil) in the bottom of the pan and over your chicken breasts. Cut up the sweet potatoes (Yams) and place them strategically in the pan so they all fit. Now you can add some spices to your sweet potatoes...I like to add a touch of vanilla extract and a dash or two of cinnamon and nutmeg ...it really brings out their flavor. now cover your pan with some foil and bake at 350 for around 20 minutes. At around 15 minutes take the top off the pan and allow the chicken to get golden and the sweet potatoes to caramelize.
When everything is done using a fork just break apart your chicken breast a little and then plate your meal. The chicken is so fork tender and juicy and the sweet potatoes taste resplendid and your fresh side salad adds just the right crunch to the entire meal. Add a little sangria or red or white wine to your meal and you have an instant classic for your family. BONUS it's a completely healthy meal full of good healthy lean organic protein (organic chicken breasts), healthy starch (sweet potatoes) and your veggies (salad greens).
