Well, I decided I did not want the "normal" Sunday night dinner...you know baked chicken rice and veggies. I looked in my pantry and decided on the unconventional turkey burgers, sweet potato fries and a refreshing summertime strawberry salad. Now I had already pre-made my turkey burgers and I usually make like 6 at a time then pop them into the freezer and use them when I feel like it.

Turkey Burgers

(makes about 10 patties)

Ingredients:

1 lb ground turkey

1 chopped onion

1 chopped green bell pepper

1 cup seasoned bread crumbs

1 egg (optional) I never include egg in my patties

Seasoning and spices that you desire

Directions:

Mix all ingredients up in a bowl and form into patties and grill or fry till done.

Sweet Potato Fries

Ingredients:

2 large size sweet potatoes-sliced into thin cut or medium cut french fry slices

1 cup flour (optional)

Olive oil-drizzle in the bottom of your pan and a little over the potato slices after you lay them out

seasonings and spices that you desire

coat the bottom of a pan with olive oil and lay the french fries into the pan so that every slice is in contact with the pan and not bunched on top of each other.

Directions:

Bake for 18-20 minutes (they will be tender on the inside and crunchy on the outside)

Strawberry Salad

1 Romaine lettuce head (chopped and washed and spun dry)

2 handfuls of baby spinach (optional) I did not use it in this salad but I have in the past

6-10 juicy ripe strawberries (diced)

5-10 cherry or grape tomatoes (sliced)

1/2 Granny Smith apple diced

1 cucumber (optional) I did not use it in this salad but I have in the past

Salad Dressing of your choice (I used a red wine vinaigrette)

Directions:

In a salad bowl toss all the ingredients and dress your salad and serve
